Baked red rice with tomatoes

INGREDIENTS


* 2 cups rice, washed and drain

* 4 cups boiling water

* 1/4 cup olive oil

* 1 yellow onion, diced

* 1 teaspoon kosher salt more to taste

* 1 spoon chicken consume powder-optional

* 2/3 cup Basmati rice(if I don’t have I used Jasmine Rice)

* 1 Chili pepper cut into cubes

* 2 tomatoes, Cut into cubes

* 1 carrot cut into cubes

* black pepper

* ½ to 1 teaspoon cumin

* 1 teaspoon paprika

* 1 tablespoon chicken bouillon

* 1 small can Tomato paste

* Parsley, for garnish

For the fried crispy onion garnish (optional)
1 large yellow onion cut in very thin rings


Instructions


* preheat the oven to 380 Fahrenheit


* put everything together in glass or ceramic baking . Mix and cover with aluminum foil

* The rice needs to be in the oven for 45minutes.

* After half an hour take the rice out and mix gently with fork

* Put it inside the oven for another 15.

* Take it out and leave it cover for 15 minutes.
