Olives and Artichokes- One pot pasta

Ingredients

1 lb. pasta(uncooked)

1cups cherry tomatoes

1 red onion, thinly sliced

3cloves garlic, minced

3cups boiling water

2 tomatoes, roughly chopped

4spoons tomato paste

Crushed Red Pepper

fresh oregano leaves

3 Tbs. basil, plus more for garnish with

2 Tbs. olive oil

10-15 olives(any kind you like)

1 cup frozen artichoke

1 cup Parmesan cheese, shredded

salt& Black pepper

1 teaspoon paprika


Instructions

In a large pot place pasta, tomatoes, tomato paste, onion, garlic, tomatoes, fresh oregano, salt, pepper, paprika, artichoke, paprika and basil. Pour in 5 cups of water and bring to a boil. Reduce the heat to medium low and simmer for 9 minutes or until the pasta is cooked and the water has mostly evaporated.

Top with Parmesan cheese.
