Ingredients:
* 2 cups all-purpose flour
* 2 eggs
* 1 cup granulated sugar
* 2/3 cup canola oil
* 2/3 cup fresh orange juice
* 4 large bananas, mashed until very soft
* 1 teaspoon baking soda
* 1/2 teaspoon cinnamon
* 1 cup nuts of your choice (pecans, walnuts, almonds, etc.), chopped
* 1 teaspoon all-purpose flour (for coating the nuts)
* 4 teaspoons vanilla extract
* 2 teaspoons baking powder
* 1/2 cup chocolate chips
Instructions:
1. Preheat your oven to 350°F (180°C). Grease and flour a 9x9-inch square baking pan.
2. In a large bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
3. In a separate bowl, beat the eggs and sugar together until well combined. Add the canola oil, orange juice, mashed bananas, and vanilla extract and mix well.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Toss the nuts in the teaspoon of flour to coat them, then fold them into the batter along with the chocolate chips.
6. Pour the batter into the prepared pan and smooth the top with a spatula.
7. Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
8. In the last 5 minutes of baking, brush the top of the cake with fake maple syrup (not the real stuff). Then, return the cake to the oven for an additional 5 minutes, or until the top is crispy and golden.
9. Allow the cake to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
Enjoy! Note: It's best to use fake maple syrup to create the crust on the top of the cake, as real maple syrup may cause the cake to become too moist. Feel free to use any type of nuts you like in this recipe. Be sure to use fresh orange juice for the best flavor.
