INGREDIENTS
* 1 LB defrost ground beef or vegan meat, such as beyond meat
* ½ cup parsley, chopped or cilantro or both of them
* 1 clove garlic, minced
* 1 teaspoon paprika
* 1/2 teaspoon cumin
* 1/2cup bread crumbs
* pinch of salt and ground pepper
* 1/4 tablespoon olive oil
* 2 stalks chopped celery
* 1 small chopped yellow onion
* 3 green onions
* chopped
* One red chili pepper
For the tomato sauce:
* 4 garlic cloves, Cut into four pieces.
* 1/4 cup olive oil
* One small chili pepper cut into little slices
* 20 Sweet cherry tomatoes
* 1/4 spoon paprika
* 1/4 spoon cumin
* 1 spoon Chicken bullion
* 1 teaspoon sugar
PREPARATION
1. In a large mixing bowl, add the meat, cilantro, parsley, garlic, paprika, cumin, onion, celery, green onion,bread crumbs, eggs, salt and pepper. Mix well using your hands And put it for an hour in the refrigerator.
2. In meantime, take a big wide pot and Start frying:olive oil & garlic, after minute add the tomatoes, fry them for 3-4 minutes then add the spices .Fry them together for 1 more minute and then add the water (about 2 cups of boiling water) Cover and cook for 10 minutes on medium heat.
3. After an hour, take out the meat from the fridge and roll a piece of meat slightly larger than a golf ball in your palm to make it smooth.
4. Cook the meatballs for half an hour. The water level needs to be in the meatballs level not higher and not lower. Taste the sauce and make sure that you don’t need to add more salt or pepper.
5. I like to put the meatballs In the oven, uncovered, on 400F and serve the meatballs on a white rice, rice noodles or couscous. Don’t forget to spread some confetti parsley/green onion before serving.
