Ingredients:
* 1 pound ground beef
* 1 medium onion, diced
* 1 teaspoon paprika
* 1 teaspoon cumin
* 1/2 teaspoon chili powder
* Salt and pepper, to taste
* 4 small flour tortillas (you can use different colors for added visual appeal)
* 1 tablespoon oil
* Optional: toppings such as shredded cheese, sour cream, lettuce, tomatoes, avocado, tahini, and/or amba sauce
Instructions:
1. Preheat a grill or grill pan to medium-high heat.
2. In a medium-sized bowl, mix together the ground beef, diced onion, paprika, cumin, chili powder, salt, and pepper.
3. Divide the mixture into 8 equal portions and shape them into oval or round patties.
4. Cut the tortillas into circles using a biscuit cutter or a glass. You should be able to get about 8 circles from each tortilla.
5. Thread the beef patties and tortilla circles onto skewers, alternating between the two.
6. Brush the skewers with oil on all sides.
7. Grill the skewers for about 3-4 minutes per side, or until the beef is fully cooked and the tortillas are slightly crispy.
8. Remove the skewers from the grill and top the beef patties and tortilla circles with any desired toppings, such as shredded cheese, sour cream, lettuce, tomatoes, avocado, tahini, and/or amba sauce.
9. Serve the skewers hot and enjoy!
