Couscous Salad with Tahini sauce

Ingredients

• 1 cup pearl couscous

• 1 can chickpeas, drained

• 1 can corn, drained

• 4tomatoes,chopped

• 2 cucumbers, chopped

• 2 peppers, chopped

• 1/4 cup Chopped cilantro

• 1/2 red onion, chopped

•1 can chickpeas, drained

• 1 can corn, drained

• feta cheese -Half cup

•salt and pepper

1/4 cup olive oil

1/4 cup lemon

Instructions:

* In a hot boiling water Cook pearled couscous according to package. wash with cold water,drain and let it cool and set aside.

* Chop all veggies drain/rinse corn and chickpeas.

* Combined all the salad ingredients into a large bowl. Finish off with feta cheese curds, olives and Tahini sauce.

* Drizzled with Salt pepper,lemon juice and olive oil.(half teaspoon salt&pepper and five spoons olive oil. Squeezed juice from one lemon)
