Lemon Poppy Seed Cake

Ingredients

* 1 cup all purpose flour

* 2 tsp baking powder

* 5 large eggs separate to whites and yolks

* 2 tsp Vanilla sugar

* 1/2 cup canola oil

* 1 cup sugar

* 1/2 cup (120ml) fresh lemon juice

* 2 tbsp fresh lemon zest

* 2 tbsp poppy seeds

Sugar - Lemon Frosting

* 1 cup powdered sugar

* 6 tbsp fresh lemon juice

Instructions

* Preheat your oven to 350 degrees F (180 degrees C) and place the oven rack in the center of the oven.

* Separate the eggs and place the yolks in one bowl and the whites in another bowl.

* Place the egg whites into the bowl of your electric stand mixer, add 1cup of sugar and continue beating, on medium high speed, until the egg whites are shiny and form stiff peaks.

* Next, sift the : yolks, canola oil, Lemon juice,flour, baking powder, lemon zest, Poppy seeds and the vanilla sugar.

* Gently on a low speed mix all the ingredients together. Pour into a six inch cake pan . Cut a piece of parchment paper to stick to the bottom. Buttering and flouring the The sides of the pan may be enough to separate the cake from the pan.

* Bake in preheated oven for 35-40minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and immediately. Allow the cake to cool completely before adding the topping.

* For the topping mix the sugar powder with the lemon juice and put it on the cake.
