One of the most delicious Jewish
Iraqi dishes, this Hummus Sambusak
is so delicious!!!
No eggs
No meat
No dairy
For the dough:
•500 gr.(3.5 cups) white all-purpose flour
•1-1.5 cup warm water(not hot! you can add if needed)
•1/4 cup oil
•1 tablespoon dry Yeast
•1 teaspoon salt
•1 teaspoon sugar
Stuffing:
•2 cans chickpeas
•3 medium-size onions
Seasoning
•Salt, Pepper, paprika, Cumin, Chili Powder
1/2 liter Canola-for frying
Preparation
The dough
In a bowl Put the yeast sugar and warm water and let it bubble for five minutes. Then add all the other ingredients and mix all ingredients Very well 6-7 minutes.
Cover with a towel and let rise for 60 minutes. after half an hour mix the dough again and let it rise for another 30minutes
The stuffing:
Rinse The water from two chickpeas cans.
Chop and caramelize the onions.
add the spices in fry for one minute then add the chickpeas and
season with paprika,Cumin, Salt, Pepper, and Chili flakes.
Taste and add more spices if needed
Making Sambusak
Divide your dough to 2 parts. Start rolling the dough with rolling pin.
Cut circles with a large glass 4.5-5 inches.
Take some stuffing with a spoon and place it in the middle of the circle.
Close the Sambusak while pressing around the open side. Then squeeze gently with a fork around and put it aside ready for frying.
